Makes about 1 cup
½ cup boiling water
½ cup crunchy salted peanut butter
2 tbsp thai sweet chili sauce
½ tsp chili flakes
1 tbsp soy sauce
1 tsp finely grated fresh ginger
Place boiling water and peanut butter in a mixing bowl and stir until smooth. Stir in thai sweet chili sauce, chili flakes, soy sauce and grated ginger. Speedy Peanut Sauce keeps for weeks in the fridge and can be thinned with a little extra water if desired.
